Recommended water/salt/pasta ratio: 10 liters water / 70 g salt / 1 kg pasta Double cooking Pre-cooking: Cook the pasta in plenty of salted water, maintaining a rolling boil for the indicated pre-cooking time. Holding: Drain the pasta and spread it on a baking sheet, adding vegetable oil. Place in a blast chiller and store in the refrigerator (0–4°C) for a minimum of one hour and a maximum of 24 hours before final cooking. Final cooking: Rehydrate in boiling water for 40–60 seconds. Double-cooking times: Precooking (Linguine) 4 min. Final cooking 40–60 seconds
